Mozzarella, Prosciutto & Olive Salad Sandwich

Here’s one good way to use your homemade mozzarella – or the stuff you bought at the store. It’s a very Italian sandwich that you can make as a panini or just as a nice toasted sandwich.

What You Need to Make Each Mozzarella, Prosciutto and Olive Salad Sandwich
2 good slices Italian bread. Ciabatta is a great choice
1 clove garlic, sliced the long way
2 slices of prosciutto
3 ¼-inch slices of fresh mozzarella
4-6 chopped green or black olives
6 halved grape or cherry tomatoes
2 T extra virgin olive oil
pinch oregano
pinch parsley

How to Make Mozzarella, Prosciutto and Olive Salad Sandwich
Rub both sides of both slices of bread with garlic.

Brush with 1 T olive oil.

Layer sandwich with prosciutto and mozzarella.

Mix olives, tomatoes and 1 T olive oil, oregano and parsley. Spread on top of prosciutto and mozzarella.

Grill both sides of sandwich on lightly oiled grill pan. Slice and enjoy.
